1 can pink salmon
1 egg
1/4 c. chopped green onion
10 saltine crackers, crushed
2/3 c. seasoned bread crumbs
1 1/2 tsp. canola oil per patty
Mix all ingredients but bread crumbs together. Divide into five patties. Dredge in bread crumbs.
Heat oil in skillet to medium to medium high. I use an electric skillet to do them all at once, but any old skillet will do! Brown patties on both sides.
I double this recipe for my family of 5. I might would even triple it if I planned on eating more than one patty!!
Don't worry if the patties break apart....getting them turned over in the skillet and onto a plate takes a little practice, and salmon piles taste just as good!
